RED BEAN-FETA AND PEPPER SALAD



Salad:
1 can kidney beans, drained
1 green or yellow pepper, chopped
1 head of cabbage, chopped
3 green onions, chopped
½ cup crumbled feta cheese

Dressing:
1 tbsp. chopped fresh parsley
1 teaspoon minced garlic
1 teaspoon lemon juice
1 teaspoon olive oil

Combine kidney beans, pepper, cabbage, green onion, and feta cheese.  Mix dressing, toss well and serve with a roll.
