BANANA SOUR CREAM BARS

½ cup butter or margarine, softened
1 ½ cups sugar
2 eggs
1 cup sour cream
1 teaspoon vanilla
1 teaspoon baking soda
¼ teaspoon salt
2 cups flour
2 medium, ripe bananas, mashed [about 1 cup]

Cream the butter, sugar, eggs, sour cream and vanilla in a mixing bowl.  Sift together baking soda, salt and flour separately and then gradually add to moist ingredients.  Add bananas and mix well.  Spread onto a greased 15” x 10” x 1” pan.  Bake at 350 for 20-25 minutes until light brown.  Cool & frost with cream cheese frosting below.

CREAM CHEESE FROSTING
1 8 ounce package cream cheese, softened
½ cup butter or margarine, softened
2 teaspoons vanilla
3 ¾ - 4 cups confectioners sugar

Cream the butter, cream cheese and vanilla in a mixing bowl.  Add sugar until spreading consistency.  Icing will not set up hard; may need to be refrigerated.  Makes 3 dozen bars.
