MINI FETA PHYLLO BITES

It is great to also garnish with a drop of red or green pepper jelly!

30 1 ¾ inch baked miniature phyllo shells
1 4-ounce package crumbled feta cheese
1 3-ounce package cream cheese, softened
1 egg
2 teaspoons lemon juice
1 teaspoon all-purpose flour
½ cup chopped red sweet pepper

Preheat oven to 325°. Place phyllo shells on a large baking sheet.  For custard filling, combine feta, cream cheese, egg, lemon juice, and flour.  Beat with mixer on medium speed until nearly smooth.  Spoon mixture into phyllo cups, using 2 teaspoons mixture for each cup.  Bake for 15-17 minutes or until shells are lightly browned. Garnish with sweet pepper.  Serve warm.  Makes 30 appetizers.
