PIZZA DOUGH

 PIZZA DOUGH


Servings: One 16-inch medium-crust pizza or two 12-inch-crust pizzas or four 9-inch thin-crust pizzas


1 tablespoon active dry yeast

1 cup warm 105-115 degrees

2 tablespoons olive oil

1 tablespoon honey

¼ teaspoon salt

3 to 4 cups all-purpose flour or half all-purpose flour and half whole wheat


1.Mix the yeast and water in a small bowl, cover, and let stand until foamy, 5 to 10 minutes.

2. Mix the oil, honey, salt , and yeast mixture in a large mixing bowl. If using a food processor, add 1 cup of flour at a time, up to 3 cups, mixing well after each addition. You may have to stir in the third cup of flour by hand depending on your machine. Or mix in all 3 cups of flour by hand with a wooden spoon.

3. If the dough seems too wet, mix in more flour, 1/4 cup at a time, until the dough is soft. Turn the dough onto a floured surface and knead in more flour, 1/4 cup at a time, until the dough is moderately stiff and somewhat firm to the touch, about 6 minutes.

4. Lightly grease pizza pan(s) or a cookie sheet (s) with oil. If you are making two or more thin-crust pizzas, divide the dough. With a rolling pin, roll out the dough on a floured surface. Gently stretch the dough to fill the pan(s).

5. Let the dough rise (it will not rise very much) while you make sauce and continue with the pizza recipe/toppings of your choice.

6. Note: I like this pizza crust best with half all-purpose flour and half whole wheat.

BALLARD'S EXQUISITE PIZZA SAUCE

 


EXQUISITE PIZZA SAUCE
Ingredients
1 (6 ounce) can tomato paste
6 fluid ounces warm water (110 degrees F/45 degrees C)
3 tablespoons grated Parmesan cheese
1 teaspoon minced garlic
2 tablespoons honey**didn't put in my sauce
1 teaspoon anchovy paste (optional)**didn't put in my sauce
3/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon dried marjoram**didn't have
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon dried red pepper flakes
salt to taste


Directions
In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.
Sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired.

HOME COOKED FIRECRACKER PIZZA

1 garlic clove, minced
1 tablespoon of butter or margarine
1 ready made pizza crust [or homemade pizza dough]
½ of a package of frozen spinach, thawed, drained, and chopped
1 cup roasted red peppers, sliced
3 Roma tomatoes, sliced
4 Portobello mushrooms, sliced
1 cup of mozzarella cheese, shredded

Sauté the garlic in the butter until it is warm.  Baste pizza crust with butter and garlic.  Cover crust with spinach; next layer peppers, tomatoes, mushrooms, and finally cheese.  Bake at 350 degrees for 15-20 minutes.
